Honey Cake (Frugal Food Thursday)

The Jewish holidays are coming up, which means it's time to make some honey cake!

This is my mom's recipe. She makes it in a 9x13 pan, but I decided to use a 9x5 loaf pan instead, and serve it as slices instead of squares. Works either way!

From a frugal perspective, if you don't have all the spices listed, don't worry about it; just leave one or two of them out. It will still be tasty. And save some leftover coffee for this recipe! You can freeze leftover coffee in ice trays, then defrost the coffee ice cubes in the microwave.

Here's the recipe:

HONEY CAKE

3 eggs
1 cup sugar
1 cup honey
1/4 cup canola oil
2-1/2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp allspice
1/2 tsp cinnamon
1/8 tsp nutmeg
1/4 tsp ginger
1/2 cup cold coffee

Preheat oven to 350 degrees. In a medium mixing bowl, mix the flour, baking powder, baking soda, and spices. To the egg mixture add half the flour mixture, then half the coffee, then the second half of the flour, and lastly the second half of the coffee. Mix well.

Spray cooking spray on a 9x5 loaf pan. Line with waxed paper and spray cooking spray on the paper. Pour batter into the pan and bake at 350 degrees for 30 minutes. Cover loaf with aluminum foil and bake for another 30 minutes or until a toothpick inserted in the loaf comes out clean.

OH HONEY! A simple and delicious dessert is always good ammunition to have. I am going to have to try this out. Thanks for the party.

I was thinking honey cake for the holidays too. I made some mini ones that are golden but no spices.. Your mother's recipe looks simple and delicious.
