Black Bottoms (Frugal Food Thursday)

Here's another baking recipe that my kids love to make! Black Bottoms have a bottom layer of cake and a top layer of cheesecake with chocolate chips. They always disappear almost as soon as I make them!

Here's the recipe:

BLACK BOTTOMS

Batter 1:
8 oz cream cheese
1 egg, beaten
1/4 cup sugar
1/8 tsp salt
1-1/2 cups chocolate chips

Beat the cream cheese, egg, sugar, and salt.  Stir in chocolate chips.  Set aside.

Batter 2:
1-1/2 cups flour
1 cup sugar
1/4 cup cocoa
1 tsp baking soda
1/2 tsp salt
1 cup water
1 tbsp vinegar
1 tsp vanilla
1/3 cup oil

Sift together the flour, sugar, cocoa, baking soda, and salt.  Add the water, vinegar, vanilla, and oil.  Mix well.  Line a mini-muffin tin with bake cups.  Fill with Batter 2 about 2/3 full.  Drop 1/2 tsp to 1 tsp of Batter 1 on top.  (It shouldn't cover the entire top.)

Bake in a preheated 350 degree oven for 20 minutes.  Makes 48.

Those look fabulous! I love anything I can put chocolate in...and I try to put it in most things. Ha, ha!

Thanks for hosting! Black bottoms were one of my favorites as a child. I keep looking for a good recipe for them, thanks for sharing!
