Spicy Crunchy Garbanzo Beans (Frugal Food Thursday)
Welcome to Frugal Food Thursday! If you have a great frugal recipe, please link up below!
Now that I've restarted my low-carb diet (I lost 28 pounds on it back in 2011, none yet so far since Sunday, but I'm hopeful), I've already made two batches of this snack! It's yummy and satisfies my craving for something crunchy and a little salty. So much more healthy than chips!
Here's the recipe:
SPICY CRUNCHY GARBANZO BEANS
2 cans chickpeas (garbanzo beans), drained
2 tbsp olive oil
1/2 tbsp garlic powder
1 tsp paprika
salt and freshly ground pepper to taste
Preheat oven to 450 degrees.
Drain garbanzos in a colander. Run cold water over the garbanzos to remove the canning liquid. Allow to drain for 10 minutes. Place chickpeas on a paper towel and pat them dry with a second paper towel.
Place garbanzos in a small mixing bowl. Add olive oil and spices. Mix until the garbanzos are covered with oil and spices.
Put garbanzos on a baking sheet in a single layer. Bake at 450 degrees for 30-40 minutes or until chickpeas are crisp, stirring every 10 minutes. Watch carefully near the end of the cook time, as garbanzos can burn. Make sure that the garbanzos don't touch the edge of the pan, as they are more likely to burn that way.
Allow to cool for as long as you can stand it. Munch away!
