Barbecue Chicken Pizza (Frugal Food Thursday)

Purchasing a whole chicken is so much more affordable than buying boneless chicken breasts. After cutting out the breast and thigh meat, and eat the wings and legs, you still have lots of extra bits of meat to use in leftovers. (And, of course, use the bones to make broth!)
So I've developed lots of ways to use up the little bits of chicken meat. Here's one of them I did a few weeks ago - barbecue chicken pizza!
Here's the recipe:
BARBECUE CHICKEN PIZZA
1 recipe whole wheat pizza dough
1 tbsp olive oil
1 onion, chopped
1 red bell pepper, chopped
3 garlic cloves, finely chopped
2 cups chopped leftover chicken
1/4 cup barbecue sauce
Make the pizza dough according to the recipe. Roll the dough out into two 9x13 rectangular pans. Prebake the crusts at 450 degrees for 6 minutes.
In a large saute pan, heat the olive oil over medium heat. Add the onions and saute, stirring, for 3 minutes or until translucent. Add the red bell pepper and saute, stirring for another 2-3 minutes. Add the garlic and saute for 1 more minute, taking care not to burn the garlic.
In a medium bowl, mix the chicken and barbecue sauce. Put half of the chicken mixture on each of the two crusts. Top with the sauteed onions and red pepper. (You can add cheese here if you want.)
Bake at 450 degrees for 6 minutes. Allow to cool for a few minutes, then dive in!
