Here's my recipe for Jelly Bean Biscotti. These would be great for those of you who celebrate Christmas to put red and green jelly beans in - very festive!

JELLY BEAN BISCOTTI
4 tbsp butter or margarine
1 cup sugar
3 large eggs
2 tsp vanilla
3 cups flour
2 tsp baking powder
1/2 tsp salt
1 9-ounce package jelly beans
1 egg, beaten
Preheat the oven to 375 degrees. In a medium bowl, cream the butter and sugar together until fluffy. Add eggs, one at a time, mixing thoroughly. Add vanilla and stir. In a separate bowl, combine the flour, baking powder, and salt. Add the dry ingredients the butter-sugar mix a little at a time until all the dry ingredients are moistened and a soft dough is formed. Stir in the jelly beans.
Flour a flat surface, like a cutting board. Using a spatula, remove the dough from the bowl and place on the floured surface. Sprinkle the top of the dough with flour. Cut the dough in half. Roll each half into the shape of a baguette. Place the two dough rolls on a greased cookie sheet, and flatten the rolls with your palm to make two loaves.
Using a pastry brush, coat the surface of the rolls with the beaten egg. Bake at 375 for 25 minutes, or until the outside of the loaves is golden brown.
Allow the loaves to cool on the cookie sheet for about 15 minutes. Then remove them and place on a flat surface. Slice each loaf diagonally into eight slices. Put them back on the cookie sheet, cut side up, and bake at 375 degrees for another 10 minutes, or until the edges of the slices are turning brown.
Transfer slices to a wire rack to cool. Makes 16 biscotti.

I use to have to make chocolate chip cookies 5 times a year for my dad to take to work at Rockwell and people would from all over the world would schedule there big meetings around those times that my dad would take those cookies to work now he is retired so I just make them and others and candy for Christmas and charity functions. JAR INGREDIENTS
1 3/4 cups all-purpose flour
1 1/2 cups vanilla baking chips
3/4 cup sugar
1/2 cup orange flavored drink mix, such as Tang breakfast drink
1/2 teaspoon baking soda
1/2 teaspoon baking powder
ADDITIONAL INGREDIENTS
1/2 cup butter, softened
1 egg
1 teaspoon vanilla extract

Directions:
Yield: 3 dozen cookies
1. Preheat the oven to 375°F.
2. Place all of the jar ingredients in a medium-sized bowl, and stir until well combined. Set aside.
3. Place the butter, egg, and vanilla extract in a large bowl, and cream with an electric mixer set on low speed or with a fork.
4. Add the dry ingredients to the butter mixture, and mix with a spoon until well combined.
5. Drop the dough by heaping teaspoonfuls onto an ungreased baking sheet, spacing the cookies about 2 inches apart to allow for spreading.
6. Bake for 8 to 10 minutes, or until light brown in color. Allow to cool for 5 minutes on the baking sheet. Then transfer to wire racks and cool completely.
7. Serve immediately, or store in an airtight container for up to 2 weeks.
CREATING THE JAR
1. Wash and thoroughly dry a 1-quart wide-mouth canning jar.
2. Layer the ingredients in the jar as shown below, pressing firmly with a flat-bottomed object, such as a tart tamper or the bottom of a narrow glass, after each addition. Make the layers as level as possible.
TOP of the jar
1 1/2 cups vanilla chips
1/2 cup orange-flavored drink mix
3/4 cup sugar
1/2 tea spoon baking soda
1/2 teaspoon baking powder
1 3/4 cups all-purpose flour
BOTTOM of the jar
3. Secure the lid, and decorate as desired

Ingredients
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
2 cups (12-oz. pkg.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
1 cup chopped nuts
Directions
PREHEAT oven to 375° F.
COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.
BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
PAN COOKIE VARIATION: Grease 15 x 10-inch jelly-roll pan. Prepare dough as above. Spread into prepared pan. Bake for 20 to 25 minutes or until golden brown. Cool in pan on wire rack. Makes 4 dozen bars.
SLICE AND BAKE COOKIE VARIATION:
PREPARE dough as above. Divide in half; wrap in waxed paper. Refrigerate for 1 hour or until firm. Shape each half into 15-inch log; wrap in wax paper. Refrigerate for 30 minutes.* Preheat oven to 375° F. Cut into 1/2-inch-thick slices; place on ungreased baking sheets. Bake for 8 to 10 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Makes about 5 dozen cookies.
* May be stored in refrigerator for up to 1 week or in freezer for up to 8 weeks.
FOR HIGH ALTITUDE BAKING (5,200 feet): Increase flour to 2 1/2 cups. Add 2 teaspoons water with flour and reduce both granulated sugar and brown sugar to 2/3 cup each. Bake drop cookies for 8 to 10 minutes and pan cookie for 17 to 19 minutes.

One of my favorite holiday cookies to make is dipped Gingersnaps. You make the cookies, dip them half way in melted white chocolate chips, and then if you want to get really festive, sprinkle the chocolate with Christmas sprinkles! They are yummy and so pretty on cookie trays. :)

I make about 35 different cookies for Christmas each year! Of course my favorite is Iced Ginger Bread Men but I also make these swirled Candy Cane ones out of basic sugar cookie dough split in half using red dye and pepperment. Then flatten each portion and put on top of one another then roll like you would for cinnamon rolls..cut slices and cook at 350 degrees for 8-10 minutes!!
