Cheap Apple Crisp (Frugal Food Thursday)

For the holiday of Rosh Hashanah, we eat apples with honey as a wish for a sweet New Year.  I also try to incorporate apples into the meal.  Sometimes I'll make a stuffing with apples, or I'll make a salad with apple slices. Most years, I'll make an apple dessert.

My plan this year was to make an apple strudel.  Most recipes call for ready-made puff pastry dough, but I figured I could make my own.  So I tried... and failed miserably.  It was a Frugal Folly to be sure!  But that is a story for another time.

So, needing to make a dessert quick with the ingredients I had around the house, I made this Cheap Apple Crisp.  It's based on a recipe from my trusty New York Times Cook Book

I topped the apple crisp with confectioner's sugar, but if you have whipped cream or vanilla ice cream, those would be divine.  Or you can make your own whipped cream from an ingredient you have around the house - or that you should have around!  I'll post that frugal tip tomorrow.

Here's the recipe:

CHEAP APPLE CRISP

6 small apples (I used Gala apples, but Granny Smith would work, too)
1 cup brown sugar
1/2 tsp cinnamon
2 tsp lemon juice
3/4 cup flour
pinch of salt
6 tbsp butter or margarine
1/4 cup finely chopped almonds (chopped in my food processor)
confectioner's sugar

Preheat the oven to 350 degrees.  Butter the bottom of a 2-quart casserole dish.

Core the apples and slice them thinly.  (I kept the peel on, but you can remove it if you like.)  Place the slice apples in a bowl.  Add 1/2 cup brown sugar, cinnamon, and lemon juice.  Toss to coat.   Pour the apples into the casserole dish.

In a small bowl, mix the other 1/2 cup brown sugar, flour, salt, butter, and nuts until it reaches a crumbly consistency.  (I used my hands for this job.)  Spread the crumble mixture over the top of the apples.

Bake for 40 minutes at 350 degrees or until apples are tender and the crust is browned.

Spoon apple crisp into small bowls and dust with confectioner's sugar.

Makes 4-6 servings.

I love apple crisp, and even better when it's made with honey. Yours looks lovely! In keeping with the subject of apples, I linked my Apple Galette from last November -- it's as easy to make as apple crisp, and can use honey, sugar, agave or your choice of sweeteners.

I like that you used nuts rather than the more traditional oats or flour mixture for the topping - that sounds like something interesting that I'll have to try.
