Peanut Barbecue Quesadilla (Frugal Food Thursday)

This summer, my daughters and I have enjoyed watching the Nickelodeon show "Figure It Out." It's a game show similar to "What's My Line" or "I've Got a Secret." Kids come on the show with a special skill or secret of some sort, and a celebrity panel from Nickelodeon shows tries to guess their secret. (The celebrities and the contestant can also get slimed. This is Nickelodeon, after all.)
A couple of weeks ago, there was a contestant named Mallory whose secret was "Won National Peanut Butter Sandwich Recipe Contest." She then demonstrated her recipe, P-Nutty BBQ Chicken Quesadillas, for the audience.
When my youngest daughter (who loves to cook and aspires to own a restaurant when she grows up) saw this, she said, "Mom, we have to try that!"
So I did a little research. I found that the contestant was Mallory Russell, 8, of Hilton Head, South Carolina. She had won the Jif Most Creative Peanut Butter Sandwich Contest. Here is her original recipe.

For our version, we left off the chicken, as I don't combine meat and cheese in the same meal. We also left out some of the ingredients my daughter found objectionable: the green onions and the cilantro. (Mallory must be less picky than my daughter!) And I used items we had in the house - lemon juice instead of lime juice, smaller 6-inch tortillas instead of larger ones and shredded cheddar instead of a Mexican blend. The ingredients were purchased cheaply, either at ALDI or on sale at Publix with coupons.
Here's the recipe:
PEANUT BARBECUE QUESADILLA
(Based on a recipe by Mallory Russell)
2 tbsp peanut butter
1/3 cup barbecue sauce
1 tsp lemon juice
4 6-inch tortillas
1/2 cup shredded cheddar, divided
2 tbsp sweet corn kernels
2 tbsp chopped tomato
sour cream and chopped tomato for garnish
In a small bowl, mix the peanut butter, barbecue sauce, and lemon juice together until well combined.
Spread the peanut butter mixture on four tortillas. Sprinkle 1/4 of the shredded cheddar on two of the tortillas. Add half the sweet corn and tomato to each of the two tortillas. Cover with the rest of the cheddar. Take the other two tortillas with peanut sauce on them and put on top of the tortillas with the fillings.
Microwave each tortilla sandwich on high for 45 seconds, or until the cheese is melted. Cut into four quarters and garnish with the sour cream and chopped tomato.
Makes 2 servings.
