This week, I'm featuring Fourth of July Cookie Cake!
I wanted to make a yummy but frugal dessert for July 4th, using ingredients I already had around the house. This what I came up with! My youngest daughter decorated it with the strawberries and blueberries.
Here's the recipe:
FOURTH OF JULY COOKIE CAKE
Cookie:
1 cup butter, softened
1-1/2 cups granulated sugar
1 egg
1 tsp vanilla extract
2-1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
Toppings:
1/4 cup butter, softened
1/2 tsp vanilla extract
dash of salt
1 cup confectioner's sugar
1 tbsp milk
1 pint strawberries, sliced
1 pint blueberries
Make the cookie cake: Cream the butter and sugar together. Add the eggs and vanilla and mix well. In a medium bowl, mix the flour, baking soda, and baking powder. Add the flour to the butter/sugar mixture a little of the time and mix well.
Press cookie dough into a 9x13 pan. Bake at 350 degrees for 15 minutes or until the top of the cookie cake is lightly browned. Allow to cool completely
Make the frosting: In a large bowl, mix the butter with a hand mixer until light and fluffy. Add the vanilla and salt. Add the sugar in a bit of a time and mix well with the mixer, until all the sugar is added. Add the milk and mix until the frosting is spreadable.
Spread the frosting over the top of the cookie cake. Decorate with the strawberries and blueberries.
