Coconut Oil Whole Wheat Bread (Frugal Food Thursday)

whole wheat bread

Welcome to Frugal Food Thursday!  If you have a great frugal recipe, please link up below!

I've been wanting to make my own sandwich bread for a while.  I already make bread - each week I make challah and whole wheat pizza dough, but I usually buy whole wheat bread for sandwiches.

Earlier this week, I was out of bread, so I decided to try making my own.  I wanted to find a recipe that was for whole wheat bread and used ingredients that I already had at home.  The recipe I wanted to find would also have you make the dough in a breadmaker, then remove and bake in the oven.

I found a recipe that met these criteria in a post from Feel Good About Dinner, which was a guest post from Brigette Shevy.  This recipe used coconut oil, which I had in my cupboard after trying it out for a review and giveaway.  I was a little concerned about using coconut oil in bread, since my husband doesn't care for coconut.

The bread was incredibly easy to make and turned out delicious, and not coconut-flavored at all.  But it didn't rise as high as I would have liked for sandwich bread. That might be because I used a mix of whole wheat flour and all-purpose flour; perhaps I should have used bread flour, which I didn't have in my pantry. It was still great to eat while still oven-warm and smothered in butter.  Yum!

Do you have a great whole wheat sandwich bread recipe that uses the breadmaker to mix and the oven to bake, and that doesn't contain a lot of expensive ingredients?  Please link it up below or in the comments!

Here's the recipe:

COCONUT OIL WHOLE WHEAT BREAD
(from Feel Good About Dinner)

1 cup plus 1 tsp warm water
1 tsp salt
1 tbsp coconut oil
1 tbsp canola oil
2 tbsp honey
1-1/2 cup whole wheat flour
1-1/2 cup all-purpose flour
1 tbsp dry yeast

Put ingredients in the breadmaker pan in the order suggested by your breadmaker's manufacturer.  Run on the dough cycle.

Once the dough cycle has completed, remove the dough from the breadmaker pan and spread it into a greased 8-1/2 x 4-1/2 loaf pan.  Allow the dough to rise for 30 minutes in a warm place.  (I lack a good place in my kitchen for bread to rise, so I turn my oven on the lowest setting for 30 seconds, then turn the heat off and put the dough in the oven to rise, then remove the dough at the end of the rising time.  This works for me.)

Preheat oven to 350 degrees. Bake bread for 15 minutes, then cover with a piece of aluminum foil and bake for another 15 minutes.  Remove bread from the pan and cool on the wire rack.

Oh gosh! This is such a tasty treat for me. The combination of coconut oil in making a whole wheat bread is definitely a must-try. This is nice. We should really get coconut oil benefits even from a simple bread.
