Mushroom & Red Pepper Sorta-Risotto (Frugal Food Thursday)

This week, I'm featuring my Mushroom & Red Pepper Sorta-Risotto!


Risotto... frugal?

I love risotto, but I just don't have the time to make it.  To make risotto, you add hot broth to short-grain Arborio rice and stir until it's been absorbed.  Then you add more broth, and stir, and more broth, and stir, and even more broth, and stir even more.  The rice turns all creamy when it's done.

I don't have the time to make it, so instead I use risotto rice and cook it like regular rice.  It comes out a little creamy, but not like real risotto.  But still yummy!

But aren't these ingredients expensive?

I found Arborio rice discounted to half price at Publix one day.  I bought two boxes... and now I'm wishing I bought more!  I also bought extra virgin olive oil for $2.49 per bottle at Publix last week.  I found marinated mushrooms and red peppers in the discount aisle at ALDI, and I bought the onions and garlic at ALDI as well.

So if you shop well, pretty much any dish can be frugal!

MUSHROOM & RED PEPPER SORTA-RISOTTO

1/4 cup extra virgin olive oil
1 sweet onions, finely chopped
3 garlic cloves, finely chopped
1 12-oz jar marinated mushrooms and red peppers, drained
2 cups chicken broth
freshly ground black pepper
1 cup Arborio rice

In a large saucepan with a lid, heat olive oil over medium heat.  Add the onions and saute for 3-4 minutes or until translucent and just starting to brown.  Add the garlic and saute for 1 more minute.    Add the mushrooms and red peppers and cook for 1 more minute. 

Add the chicken broth and pepper. Turn the heat to high until the broth and vegetables are boiling.  Add the Arborio rice and stir.  Turn heat to medium-low, cover the saucepan with the lid, and cook for 20 minutes, or until the liquid has been absorbed by the rice.

Makes 4 servings as a side dish, or 2 servings as a main dish.

Thank you for hosting! I've linked up Crock Pot Barbecue Beef Brisket...but you can use any type of roast that you find on sale. Slow cooking really helps make a tough cut of meat turn out fabulous! :-)

Risotto does take a little more effort and is so worth it, but if you don't have the extra few minutes, this is a great short cut. Good idea! Thanks for sharing on Hearth & Soul. :)
