Char Crust Salmon & Veggies + Giveaway! (Frugal Food Thursday)

I love yummy, spicy food, but sometimes I don't have the time to create my own spice blends. And when I cook with them, sometimes regular spice blends don't hold in the meat juices, and the food ends up being dry.
Char Crust to the rescue! Char Crust dry-rub seasonings were originally developed in 1957 to give steaks a flavorful charred-like crust while sealing in natural, succulent juices. They are now used nationwide to enhance a variety of dishes from beef, lamb, and pork, to poultry and seafood.
Char Crust rubs also fit many food lifestyles, such as low-fat, low-carb, or low-calorie diets. All Char Crust rubs are also certified kosher.
I had the opportunity to try these delicious flavors:
I also used the Ginger Teriyaki and Roasted Garlic Peppercorn rubs to make this delicious recipe. Besides being delicious, it was frugal as well! The salmon fillets were purchased at ALDI - 2 pounds for $7.99, a great price! The colored peppers and onions were also purchased at ALDI when they were on sale at the end of the produce aisle. And the tomatoes were purchased at Western Beef, where they were also on sale.
CHAR CRUST SALMON & VEGGIES
4 salmon fillets (1 lb total), defrosted
4 tbsp Char Crust Ginger Teriyaki dry rub
1 red pepper, chopped
1 yellow pepper, chopped
1 sweet onion, chopped
2 plum tomatoes, chopped
3 tbsp olive oil
2 tbsp Char Crust Roasted Garlic Peppercorn dry rub
cooking spray
Preheat oven to 450 degrees.
Dredge salmon fillets in Char Crust Ginger Teriyaki dry rub, covering all surfaces. Spray a 2-qt baking dish with cooking spray and place the fillets in the dish.
In a medium bowl, combine the chopped peppers, onion, and tomatoes. Drizzle with olive oil. Add the Char Crust Roasted Garlic Peppercorn dry rub and toss vegetables to coat. Spray another 2-qt baking dish with cooking spray and place the vegetables in the dish.
Bake both dishes in the oven at 450 degrees for 15-20 minutes, until the salmon fillets are cooked through and the vegetables are roasted.
Serves 4.
(Unfortunately, I have not yet had the opportunity to try the All American Barbecue rub, but I'm sure it's delicious as well!)

- Roasted Garlic Peppercorn features the robust flavor of roasted garlic and onions with the zing of peppercorns and a hint of Worcestershire and lavender. Its versatility has made it a best seller. It complements steaks, lamb, seafood, pork, poultry, and potatoes.
- Ginger Teriyaki is a balance of sweet teriyaki, fragrant ginger, plus a tingly touch of wasabi that lends a new dimension and creates a modern teriyaki interpretation. It complements chicken, fish, and steak.
- Amazin’ Cajun is a spicy-sweet blend of piquant cayenne pepper, onion, garlic, oregano and a mélange of other Mardi Gras flavors. It brings the sublime heat of New Orleans to catfish, chicken, shrimp, and even “dirty” rice.
- All American Barbecue takes the best flavors of American barbecue and blends them into a tangy-sweet, slightly spicy rub. It has rich molasses from Memphis, tangy tomato from Kansas City, mustard, pepper and vinegar from the Carolinas, plus a wisp of smoke from Texas.
I also used the Ginger Teriyaki and Roasted Garlic Peppercorn rubs to make this delicious recipe. Besides being delicious, it was frugal as well!
