Menu plan 3/12/12: Spring break conundrum
This week, the kids are home for Spring Break. Why the schools decided that this week would be Spring Break, and not the week of Passover/Easter, I don't know.
(Actually, I do. The schools have their high-stake testing in the first weeks of April. Why not just move the tests forward a few weeks?)
So on the one hand we won't have the usual afterschool meetings, practices, and other commitments, so I'll be home more to make dinners. On the other hand, I'll be tired from doing things with the kids, so I probably won't want to cook all that much at night. What to do?
So I'll stick with my usual types of meals, I think. If I feel like making a bit more, then great! Otherwise I have my simple plan to fall back on.
Here's what's for dinner this week:
Monday - 3 Can Veggie Chili over pasta
Tuesday - chicken stir-fry over brown rice
Wednesday - Sundried Tomato Beefaroni, salad
Thursday - green pepper whole-wheat pizza
Friday - Everything Soup, salad, challah
Saturday - leftover night!
Sunday - dinner out!
