Fresh Take Salmon Salad (Frugal Food Thursday)
Kraft has recently released several new products, which have been free or almost free at Publix. The MilkBite granola bars were delicious, and the Philadelphia Indulgence chocolate cream cheese was luscious when spread on my homemade challah.
I also purchased the Kraft Fresh Take cheese and breadcrumb mixes. I chose the Chili Lime & Panko flavor. Here's how you can get two for free at Publix through Friday, March 16th:

I used the cheese and breadcrumb mix to cover salmon fillets. I get 16 oz of salmon fillets (4 fillets) for $4.49 at ALDI. Then I served them over salad greens. Salmon salad is a regular meal in my menu plan, and the bread crumbs made it even better!
FRESH TAKE SALMON SALAD
4 salmon fillets, 4 oz each, defrosted if necessary
1 package Kraft Fresh Take Chili Lime and Panko cheese and bread crumb mix
2 Romaine lettuce hearts, torn into small pieces
2 ribs celery, sliced
12 baby carrots, sliced
1 cucumber, skinned and sliced
2 Roma tomatoes, chopped
Preheat the oven to 450 degrees. Moisten the salmon fillets. Mix the bread crumb and cheese mix according to package directions. Dredge the salmon fillets in the cheese and bread crumb mixture. Bake at 450 degrees for 15 minutes or until baked through.
Prepare salad by combining the lettuce, celery, carrots, cucumber, and tomatoes. Toss well and split into four large salad bowls. Place one fillet on top of each salad. Top with your favorite salad dressing.
