Menu plan 1/2/12: Leftover night
This week, I'm intentionally having a leftover night. We have so many leftovers from the many dinners I made last week - but there's not enough of any one leftover for a full meal. And there's too much just to use up for lunches, which is the usual fate of leftovers in my house. So we'll just heat up a bunch of things and everyone can pick what they want. Hopefully after that, there will be some room in my refrigerator again!
Here's what's for dinner this week:
Monday - leftover night
Tuesday - whole wheat pasta with ratatouille, salad
Wednesday - picadillo over brown rice
Thursday - mushroom whole-wheat pizza
Friday - Turkey Broth with Matzo Balls, chicken, salad, challah
Saturday - dinner out
Sunday - sandwich night

Ooh, your menu plan looks so good - I keep an ice cream tub in my freezer and put leftovers in it to create a soup every few weeks!
