Menu plan 12/5/11: Where's the produce?
I've put off buying produce for the last week, because I was overloaded with sale-priced produce. And I'm tired of buy vegetables, only to have to throw them out when they get moldy. So instead of buying more last week, I just used up what I had. And now, I'm down to just a little bit of lettuce and a few celery stalks. Definitely need to make a produce run tomorrow!
So since I'll have plenty of fresh produce, my menu plan includes lots of salad to use it up!
Here's what's for dinner this week:
Monday - Poached Chicken Breasts over salad
Tuesday - meatballs in tomato sauce, salad
Wednesday - salmon with 7-Spice Seasoning over salad
Thursday - Whole Wheat Pizza with peppers and onions
Friday - Balsamic Chicken, salad, challah
Saturday - grilled cheese and tomato soup, vegetable sticks
Sunday - takeout

This all sounds so yummy! I have weeks where I forget to use the produce, and then I have to scramble with the meal plan to make sure that the produce isn't wasted. Even though the produce ends up in the compost, who wants to pay for compost?
