Frugal Food Thursday: Sour Mango Coleslaw

May is Mango Month here at Frugal Follies! I have two big mango trees in my backyard, and both are filled with ripening fruit. My challenge for myself this month is to use the mangoes to make jams, sauces, and other wonderful things. (Such a problem, huh?)
But the mangoes still aren't ripe! Last week I used some green mangoes to make mango salsa, and this week, I'm making mango coleslaw.
I'm loving the combination of green mangoes and ginger. They go together so well! And the addition of garlic to the dressing makes it even better!
I got this recipe from here, but made some changes. I substituted lemon juice for the lime juice, and used twice as much red cabbage and did not use green cabbage. I also substituted a Vidalia onion for the red onion and left out the carrots because I didn't have any on hand. (First rule of frugal cooking: Use what you have!)
It made for a very refreshing, healthy, and delicious cole slaw!
SOUR MANGO COLESLAW
2 tbsp lemon juice
1 tbsp mayonnaise
1 tbsp extra-virgin olive oil
1/2 tbsp ginger root, finely chopped
1 garlic clove, finely chopped
1 large green mango, peeled, pit removed, and julienned (cut into matchsticks)
1/2 cup red cabbage, chopped
1/4 cup Vidalia onion, julienned (cut into matchsticks)
In a medium mixing bowl, mix lemon juice, mayonnaise, olive oil, ginger, and garlic together. Allow to stand for five mintes so flavors will blend. Add mango, cabbage, and onion. Toss so that the dressing coats the cole slaw. Chill for 30 minutes to allow flavors to contine to blend. Keep chilled until serving.

Wow laura what a unique combination of flavors! I too like the tartness of an underripe mango but never thought to make it into coleslaw, though I have used it in a salsa! Thanks so much for sharing this with us on the hearth and soul hop! All the best, Alex
