Frugal Food Thursday: Mango and Pineapple Salsa

May is Mango Month here at Frugal Follies!  I have two big mango trees in my backyard, and both are filled with ripening fruit.  My challenge for myself this month is to use the mangoes to make jams, sauces, and other wonderful things.  (Such a problem, huh?)

But the mangoes *still* aren't ripe! This time two years ago, I was up to my neck in ripe mangoes.  I guess the "winter" here in South Florida lasted longer this year than it did back then.  (Last year, due to a winter freeze, I didn't get any mangoes at all!)

I did bring in a few into the house and those have ripened.  I also have lots of fresh produce left over from the 50% off sale at my local produce store.   I decided to use some of the produce with the mangoes to make a mango and pineapple salsa.

I didn't have a fresh pineapple, so I used canned.  I'm sure it would be so much better with fresh, but this is far more frugal.  I loved how the mango and pineapple tasted with the cilantro - very tangy!  And some fresh crunch from the pepper and cucumber, and a spicy kick from the jalapeno.  This would be great alongside chicken or fish, but I enjoyed it all by itself!

MANGO AND PINEAPPLE SALSA

2 scallions, chopped
1 Roma tomato, seeds removed and chopped
1/2 cucumber, peeled and chopped
1/2 yellow pepper, seeds removed and chopped
12 chunks canned pineapple, chopped
1 mango, peeled, pit removed, and chopped
1/4 cup fresh cilantro, chopped
1 jalapeno, seeds and ribs removed and chopped
Salt to taste

Mix ingredients together.  Add salt to taste. Cool in refrigerator for at least 1 hour for flavors to blend.

I wish I have a mango tree in my backyard! I think in my climate it would probably die even if it was left inside.
