Frugal Food Thursday: Passover Granola

With Passover coming up soon, I thought I'd share a couple of my favorite frugal Passover recipes in the next few weeks.
This week's recipe is for Passover "Granola." It's great for breakfast or for a snack. You can add whatever nuts and dried fruits you have on hand for it - use the recipe as a guide.
Like last week's recipe for mini potato knishes, I got this recipe from somewhere on the pre-Web Internet back in 1995. I'm guessing it was from a Usenet group, though the printout I have doesn't show which group.
PASSOVER "GRANOLA"
1/2 lb matzah farfel (small, broken-up pieces of matzah)
1/2 cup oil
1/2 cup brown sugar
1/2 stick butter or margarine
1/2 cup water
1/2 cup chopped nuts
1 tsp cinnamon
raisins to taste
coconut to taste
dates to taste
In a medium saucepan, melt butter in oil. Add the water and brown sugar, and mix thoroughly. Add the remaining ingredients. Stir until all ingredients are coated well. Spread onto a greased cookie sheet. Bake in a preheated 350 degree over for 20-25 minutes, stirring occasionally to be sure that the dried fruit does not burn. Allow to cool completely and store in a plastic container.

Your "granola" must smell wonderful while it's baking! What could be better than cinnamon, dates, nuts and brown sugar together?!
My entry today is really frugal -- Navy Bean Soup. I can make 2 quarts of it for about the price of one can of ready-made.

Hi, This sounds like a great recipe and I will try it next week. I bought chocolate covered matza and toasted coconut covered marshmallows last week because the stores run out of them so quickly, and found me kids (both home for Spring break) making Passover S'mores with them...we have none left. Next week I will try to remember to link up with you on Thursday.
@suekitchen - We make Passover S'mores every year, too! This year I'm going to try making my own chocolate-covered matzah, since it is so expensive at the stores, and sometimes the chocolate flakes off anyway.

Well, what do you know? Passover granola? I love granola, so I might as well try a variation on it in honor of the season! Glad you linked to Food on Fridays!
Thanks for the link up. Mines not a recipe, but what I've been working on all week pretty much. I do not wish to see a turkey again for a very long time...LOL.
Granola is a great idea for Passover. During the day when hungry, grab a handful and we are good to go.
