Menu Plan 3/14/11: Spring break!
This week is Spring Break for my kids! We'll just be relaxing and taking things easy. So I'm taking things easy in the kitchen this week. No fancy stuff, just real basic dishes.
Here's what's for dinner this week:
Monday - chicken stir-fry over brown rice
Tuesday - fish sticks, pasta and cheese, salad
Wednesday - mushroom pizza on whole wheat pizza dough, fruit
Thursday - taco salads
Friday - Chicken Basquaise, rice, challah
Saturday - pancakes, fruit
Sunday - dinner out!

Great looking menu! That chicken sounds intriguing!
Question on the pizza dough because I am really interested in trying to make it and I have a breadmachine that I never use. I just quit my job to stay home wi my two year whos favorite food is pizza. I would love to know how to make it a little healthier. Which kind of yeast do you use? I have the kind for pizza dough right now but it says you just mix it in a bowl which works okay. Is yours using the regular stuff in the big jar or the rapid rise? I just got a coupon so I am going to go get the right one and make this :) Thanks for the recipe.
Right now I am using Fleishmann's instant dry yeast that comes in 2 1-lb. packages at a warehouse store. It is so much cheaper there than in the jars or in the little packets. But I've used the jarred and packets in the past and they both work fine, too. I don't proof the yeast (putting it in a bowl with water), I just throw it in. I don't recommend using the Rapid Rise yeast here.
