Frugal Food Thursday: Happy Face Quesadilla
Welcome to Frugal Food Thursday! If you have a great frugal recipe, please link up below!
Today's recipe comes courtesy of my 5-year-old daughter, who thought it up by herself.
"Mom," she said last weekend, "can I have a tortilla and some square cheese and some white cheese? I'm going to make a happy face for lunch."
I got out a tortilla, a slice of American cheese, and a packet of shredded mozzarella. And a plate. She put the tortilla on the plate, used the American cheese for the eyes and nose, and made the mouth out of the mozzarella. She then asked me to microwave it.
And ta-da! lunch was served.
It was so cute, I took a picture of it. She asked, "Is that for your blog?"
So, here it is!
You could add some other healthy ingredients to this - like red peppers for hair, or olives for ears, or maybe a shredded carrot beard. The only limit is your imagination!
And here's a formal recipe, though I don't think it's really needed...
HAPPY FACE QUESADILLA
1 8-inch flour tortilla
1 slice American cheese
1 oz shredded mozzarella cheese
Place the tortilla on a microwave-safe plate. Using your hands, rip out 3 circles from the American cheese and place on the tortilla to make the eyes and nose of the face. Put the mozzarella on the tortilla in a mouth shape. Microwave for 20 seconds, or until the cheese is melted.

Love your happpy face quesadilla recipe! I was able to link up my meatless macaroni casserole but had (user) problems with my Chocolate Chip Ice Cream Muffins. Would you be so kind as to delete my two attempts to do so (link #8 and #10)? Thanks and so sorry!
Hi Laura,
Your food looks great! I am sharing my Southwest Tilapia Chowder. Thank you for hosting and have a great day!
Your Linky Party looks great! I would really appreciate it if you would give me a link back on you post when you link up. Thank you for sharing with Full Plate Thursday and hope to see you next week!
Your daughter has the right idea about about food -- it should be good to eat AND to look at!
My link is for Roast Chicken with Savory Vegetables -- simple, healthy, natural, and economical, too. I’m amazed at how much the same food costs if someone else cooks it for me :-(
