Menu Plan 2/7/11: Repurposing Super Bowl leftovers
I waited to do my menu plan this week until after the Super Bowl, to see what leftovers I would have. And, of course, I have a lot! So many of them will be incorporated into meals this week.
There's lots of cut-up veggies in the house. Besides eating them for lunches and snacks, I'll combine them with the last package of Thanksgiving turkey leftovers from the freezer to make a turkey stir-fry. Black bean chili will have some chicken added to it and served over pasta. Blue cheese dip will turn into dressing for a wedge salad, and spinach dip will become a yummy pasta topping with the addition of mushrooms and parmesan cheese.
Here's what's for dinner this week:
Monday - turkey stir-fry over brown rice
Tuesday - chicken and black bean chili, whole-wheat pasta
Wednesday - pepper pizza on whole wheat pizza dough, fruit
Thursday - tilapia fillets, brown rice, wedge salads
Friday - pot roast cooked in the crockpot,, carrots, challah, salad (this was scheduled for last week, but I didn't end up making it, so here it is again!)
Saturday - pasta with spinach dip sauce
Sunday - dinner out!

My kids LOVE challah bread. Are you pleased with the recipe you have? If so, I think I will try it.
