Frugal Food Thursday: Raspberry-Banana Bread

I've been participating in the Clean Out the Cupboards Challenge this month (please join us!), so I've been featuring recipes that I've made from various ingredients I've found around the house and wanted to use up.  Two weeks ago, I showed my appetizers from the cupboard, and last week, my black bottom cupcakes.

This week, I wanted to use up some fruit that I had in the freezer.  For one, I have lots of frozen bananas.  I buy bananas at ALDI (at 39¢ per pound, the price just can't be beat!), but sometimes I buy too many.  When they start to go brown, I throw them in the freezer, peels and all.  Once defrosted and peeled, the insides are nice and mushy, perfect for banana bread and other recipes.

The other ingredient I wanted to use up were some frozen organic raspberries I bought on sale last year with coupons.  (And people say you can't buy healthy food with coupons!  It is definitely possible.)  I combined the two with some whole wheat flour to make a fairly healthy whole-wheat raspberry-banana bread.

Note: if you buy the raspberries at full price, this is *not* a frugal recipe!  If you don't have a cheap source of raspberries, substitute.  You could try a different frozen or fresh fruit (strawberries or blueberries would work nice), chocolate chips, or nuts.  See what you have in your cupboards and experiment!

RASPBERRY-BANANA BREAD
(based on a recipe from allrecipes.com)

2 cups whole wheat flour
1 tsp baking soda
1/2 tsp cinnamon
2 eggs
3/4 cup vegetable oil
1-1/2 cups sugar
3 bananas, mashed
1 10-oz package frozen raspberries, thawed and drained

Preheat oven to 350 degrees.  Grease and flour a 9x5 loaf pan.

In a large bowl, combine the whole wheat flour, baking soda, and cinnamon, and set aside.

In a medium bowl, add the eggs, oil, sugar, and bananas.  Mix with an electric mixer until well combined and smooth.

Add the banana mixture to the flour mixture, mixing with a spoon until the dry ingredients are moist.  Fold in the raspberries.  Pour the batter into the prepared loaf pan.  Bake for 60 minutes, then cover with a piece of aluminum foil.  Bake another 15 minutes or until a toothpick inserted in the loaf comes out clean.

It's my first week linking up with you, too. Your banana bread looks delicious. I'm hoping the raspberry canes I planted a couple of years ago will start yielding enough for me to have a supply for things like this in a year or two!

One of my boys is "banana man" so unlike many households, bananas rarely have time to spoil around here :) I buy overripe bananas off the discount rack really cheap and freeze them the same way you do to use in baking.

This morning I'm contributing Turkey Breast for the Crockpot, not only because it is so easy, but also because it's really frugal! If you watch for specials during the holidays to put some extra turkey breasts in your freezer, you can have turkey breast with the traditional trimmings, or turkey breast as an easy entree for guests, or turkey breast sliced for sandwiches or salads (and that'll be especially frugal compared to deli meats!), or turkey for appetizers throughout the year.

It's also very adaptable for many allergy issues, too (more detail in the recipe on that).

Hi! I am sharing my recipe for Meyer Lemon Cookies. If Meyer Lemons are too expensive, this can be made with regular lemons. It would also be great using limes or oranges.

Hi Laura! I realized that if you cook something BIG even if it costs a bit more money, you will have tons for left overs and that makes it much more frugal! I made my first ever roast and I was surprised to see how I could stretch it to 3 meals! The bittman pork loin was awesome! All the best, Alex

i love to eat banana bread or any healthy-made breads. but i can't cooke because i don't have an oven. maybe i will start working it out in a wish list..but anyway, thanks for dropping at Food Trip. you may join us next time.
