Frugal Food Thursday: Black Bottoms

Last week, I posted my recipes for Pantry Bruschetta and Garlic Cheesy Bread, which I made for New Year's Eve. Since I was starting the Clean Out the Cupboards Challenge the next day, I had made those appetizers out of food already in my pantry.
I also wanted to make some dessert... but what? I looked through the food in my pantry to see what I could make. A cake? No frosting, and my homemade frosting never comes out well. No ice cream, so there goes that. Cookies? Not special enough for New Year's.
But, I do have some chocolate chips, and a lot of cream cheese. How about black bottoms?
If you've never had them, black bottoms have a bottom layer of cake, and a top layer of cheesecake mixed with chocolate chips. It's made in mini cupcake tins. And they are super yummy!
Sorry no picture of the final product - they were devoured before I had a chance to take one! Recipe courtesy of my mom's cookbook.
BLACK BOTTOMS
Batter 1:
8 oz cream cheese
1 egg, beaten
1/4 cup sugar
1/8 tsp salt
1-1/2 cups chocolate chips
Beat the cream cheese, egg, sugar, and salt. Stir in chocolate chips. Set aside.
Batter 2:
1-1/2 cups flour
1 cup sugar
1/4 cup cocoa
1 tsp baking soda
1/2 tsp salt
1 cup water
1 tbsp vinegar
1 tsp vanilla
1/3 cup oil
Sift together the flour, sugar, cocoa, baking soda, and salt. Add the water, vinegar, vanilla, and oil. Mix well. Line a mini-muffin tin with bake cups. Fill with Batter 2 about 2/3 full. Drop 1/2 tsp to 1 tsp of Batter 1 on top. (It shouldn't cover the entire top.)
Bake in a preheated 350 degree oven for 20 minutes. Makes 48.
