Recipe: Turkey with Snow Peas
Looking for a cheap and delicious way to use up your Thanksgiving leftovers? Try this great recipe for turkey with snow peas.
This recipe was inspired by my mother-in-law, who makes it as a dish for company. I'm making it here with leftover turkey, but she usually uses boneless, skinless chicken breasts instead, dicing them into bite-sized pieces and marinating them in the cooking sauce. Just be sure to thoroughly boil the sauce before serving if you use it as a marinade.
The most expensive ingredient here is the snow peas, but luckily the recipe doesn't use much, just 4 ounces. To get mine cheaply, I used a $1 off produce coupon from Target. (Check some of my great Target deals here.) The total cost of the snow peas before the coupon was $1.16, so after the coupon, the snow peas only cost 16 cents! (If you can't find such a great deal, you could substitute frozen snow peas or sugar snap peas, but I like the crispiness of fresh.)
To cut down on the saltiness, use homemade chicken broth instead of canned. I make a pot of chicken broth on my Freezer Cooking Days and then freeze it in ice cube trays. Then, when I make sauces, I just take a few cubes, melt them in the microwave or in a saucepan, and I have fresh homemade broth.
TURKEY WITH SNOW PEAS from Frugal Follies
8 ounces chicken broth
2 tbsp. low-sodium soy sauce
1/2 tsp. garlic powder
1/4 tsp. ground ginger
1/4 tsp. red pepper flakes
1/4 cup water
1 tbsp. cornstarch
2 tbsp. canola oil
1 bunch scallions, chopped
2 stalks celery, chopped
2 carrots, sliced
1 small or 1/2 large green or red pepper, diced
1 lb. leftover turkey, chopped into 1" cubes
4 oz snow peas, strings removed
Make the cooking sauce: In a medium bowl, mix the broth, soy sauce, garlic powder, ginger, and red pepper flakes together. Set aside.
Make the thickening liquid: In a lidded plastic bowl, put in the water and cornstarch. Put the lid on the bowl and shake until the cornstarch is thoroughly mixed with the water. Set aside.
In a large skillet, heat the canola oil over medium-high heat. Stir fry the scallions for 1 minute. Add the celery and carrots and continue to cook, stirring often, for 3-4 minutes. Add the green or red pepper and continue to cook, stirring often, for another 2 minutes.
Add in the cooked leftover turkey and mix together. Turn heat to high and add cooking sauce. Once the sauce comes to a boil, turn heat down to medium-low and simmer for 5 minutes.
Turn heat back to high and add thickening liquid. Continue to cook, stirring, until the sauce has thickened. Turn heat back to medium and add snow peas. Cook for 1 more minute or until snow peas turn bright green. Remove from heat and serve over a bed of brown rice.
Makes 4 servings.
