May Freezer Cooking Days: The results
I've completed most of my freezer cooking that I planned for this weekend.
I had an ambitious plan, and I ended up leaving out the items that had the most hands-on work - pancakes and waffles for the freezer. I hope to tackle those another day!
But here's a list and a picture of everything I made:
2 large containers of granola
3 quart-sized bags of oven-roasted potato wedges3 quart-sized bags of sweet potato fries
2 meals of Crockpot Chicken and Olives
3 quart-sized bags of kidney beans
3 quart-sized bags of black beans
5 rolls of chocolate fudge cookie dough
I'm happy to have all this in my freezer - although I only made two complete meals, I have the makings for lots of other great meals there now!

I use to do this when I had a newborn. It was easy to get dinner ready at night. I think I need to start doing this again!
Can I ask about your oven potato wedges...I've never tried this and would love to! In the past, I've read that potato products don't freeze very well, in general. The only thing I've ever tried is smashed potatoes. Do you cook the wedges all the way or just par-cook them? I assume you reheat them in the oven? Thanks!
I toss the wedges with olive oil, salt, pepper, and garlic and onion powder. I bake them on a cookie sheet with none of them touching each other for a little less than I'd bake them if I were serving them fresh - maybe about 25 minutes or so. Once they've cooled, I put the cookie sheet directly in the freezer (I've cleared out the bottom shelf for this) and let them freeze - that way they all freeze individually. Then once they're frozen, I put them in gallon-size plastic zipper bags. I then reheat them in the oven for about 15 minutes. They work out pretty well for me.
